...it's the end of the world as we know it and I feel fine!

Okay, at some point in the future, I'll be playing in a post-apocalyptic game set around 900 years in the future. Please don't suggest using d20 modern/future for this - the DM is perfectly aware that those exist and prefers the D&D ruleset. The setting will be fairly grim, as is more or less implied by the phrase post apocalyptic.

I was thinking of playing a Paladin, most likely a Greyguard so as not to stick out like a sore thumb in the highly pragmatic setting. This is largely so I can have a white and gold Harley as my special mount :D

So, how would one go about statting out a motorbike as a Paladin's mount?

I'd be tempted to use the stats for a light warhorse with the Construct type. Cutting out the natural attacks and replacing them with, for instance, a small blade attack would work as well in my view. I'll think about this in case I can offer more useful advice.
