I admit it, I'm a huge fight scene otaku. I can't help myself, the epic beauty of two fighters standing proud, dueling to the death with a fatalistic romance is enough to give me a nerdgasm. I'm a junky. And I'm outta junk.

I'm looking for recommendations for great anime to watch with sword fighting and or martial arts, magic, gun kata, whatever. I want to see some beautiful choreography. I need a hit of that crazy philosophy only death seekers know. I want to hear attack names shouted and then explained in painstaking detail with questionable levels of physics. I want TO LIVE.

Already seen:
One Piece (Zoro!, Brooks!)
Naruto
Bleach (meh)
Fate Stay Night (Sasaki is by sweet, sweet bishounen no homo love)
Cowboy bebop (not enough gunfighting)
Rurouni Kenshin (king of this, far and away)

just to give you some Ideas. Help me out here!

The first idea that jumps to my mind for this is Grenadier. Not only is your main character the Hot-Chick Gunslinger but there's also the swordsman who you meet first has his own cool moments (for example he gets tired of getting bombarded by artillery so he gets on the roof and cuts the shell in half before it hits). It also has the elite squad to hunt them down each with their own unique abilities.

Just to throw out some others to check out:

Claymore: Just plain awesome. Anime has a Gecko ending but the manga's still going strong.

Black Cat: Another fun one, Tao masters vs. a group of assassins trying to keep the world in order.

Burst Angel: Little downer of an ending but Joe is badass.

History's Strongest Disciple Kenichi: Martial arts anime with slightly better than normal descriptions for the madness.

The Third - Aoi Hitomi no Shoujou: mecha, gun fights and sword battles set in a wasteland survival setting with what amount to tech Nazis with robot soldiers to hunt down those who break the Technos Taboo.

Hunter X Hunter: fun plot, a little like Dragonball but more realistic.

That's all I can think of at the moment but that should be enough to keep you busy for a while.

Avatar: The Last Airbender is pretty good. They don't shout names of their attacks, but they're based on actual Chinese martial arts. As an American show, it doesn't show any blood IIRC, but the fight scenes should be good enough for you to ignore that. Seirei no Moribito has spear- and polearm-users fighting each other, but I haven't seen anything besides few clips.

Judging by your stipulations, it sounds like Samurai Champloo is an anime you'd really love.

Karas (http://www.youtube.com/watch?v=V5V2qwYOiNo) is pretty fight heavy if your looking for just awesome fight scenes.

Also, while Kara no Kyoukai is a lot more dialogue and less fight heavy, it does have some amazing scenes (http://www.youtube.com/watch?v=LNVmT3ho7kw). As well, kara no kyoukai is part of the Nasuverse, so it's by the same guy who made the original Fate Stay Night.

Soul eater (http://www.youtube.com/watch?v=mPVyl_1X9rI&feature=related) also has some pretty cool fights.

Well if you want get quite good live action fight scenes you should try Wuxia films, like House of Flying Daggers or Hero.

Gurren Lagann. Giant Super Robots for the most part, but always a good suggestion. And Kamina, Viral and even Simone later in the series will give you all the badass warrior attitude you can handle.

Rarely has a hero ever been so thoroughly and savagely beat down after a string of fights with rock-men, snake-women, guys full of hornets, exploding people, really queeny guys with electrical wires, hordes of ninjas with what must be the shuriken equivalent of a Vulcan cannon, and total, physics-breaking action.

Crazy, ninja action all the way.

Oh, Vampire Hunted D: Bloodlust also had great fight scenes. The shadow-manipulator was the cause of at least 2 really good ones alone. The shapechanging chick had 2 really epic ones as well. Heck the Barbaroi in general led to incredible sequences.

For manga, I'll throw down a recommendation for Mahou Sensei Negima. Neither of the animes got far enough into the storyline for true epicness and the OVAs cover a break in the fighting, but lately the fighting has been at DBZ levels, only without the long pauses for powerups. The amount of stuff packed into each chapter is great.

Other than that, I'm in the middle of Gurren Lagann myself, and it's pretty awesome so far (epsiode 2)

I do not believe that any fight scenes, no matter how over-the-top the physics, can be significantly better than the ones Inigo Montoya gets in the Princess Bride.

Some things are more important than flashiness. Which is not to say flashiness doesn't matter.

FLCL has few fight scenes, but when they happen they are totally awesome. And weird, because it's Gainax we're talking about here. They're also completely synchronized with the background music, on top of that. Example from episode 2. (http://www.youtube.com/watch?v=jJnQd0XSGVY)

While I agree with Vampire Hunter D, I'd say that in the case of Ninja Scroll the fight scenes got overshadowed by the very unoriginal plot which my father described as "Conan in medieval Japan" and copious amount of squick. And least for me.

The original series was so gloriously over the top it swiftly became a completely hysterical comedy to me and my GF at the time.
