Undead can be dazed right? You could ask your DM to houserule that undead are dazed instead of stunned.

Um...The only thing I can even think of that converts a stun into a daze is an Archivist's 11th level Dark Knowledge that dazes on a DC20 check, and stuns on a DC30 check, but the stun is reduced to daze if the target is immune to being stunned.

But yea...that doesn't really help...

What about a true death crystal, doesn't that allow for critical hits against undead. It might be reaching, but if they can be critical hit, they can be stunned, right? Ask your DM.

Aside from the Archivist ability that has already been mentioned, the only thing I can think of to remotely allow this, would be the Scarlet Crusader PrC in the Warcraft D20 Lands of Conflict book

The emphasis there is making undead vulnerable to non-lethal damage, which... could be helpful.

Doesn't stunning fist use a fortitude save and not work on objects?

Yet another hurdle to leap. (or does that rule only apply to spells?)
