I'm going to be running a few one-off 3.5 adventures. Lacking much of anything resembling free time, I'm looking to run modules. What are the classics of the genre I should look to acquire? I'm primarily looking for adventures appropriate to levels 5-8, but am interested in others as well.

Hmm...

Tomb of Horrors, levels 8-10 (free below)

Crumbling Hall of the Frost Giant Jarl - level 10 (free below)

Expedition to the Demonweb Pits (long, 9-12)

Here's a long list of free ones:

In that general level range, I've also run White Plume Mtn and Lost Caverns of Tosjcanth, neither of which were particularly good or bad.

"something's cooking in the kitchen" and "A dark and stormy knight," both fun, each can be finished inside of a single day of playing. But both need to upgraded for play, since they're intended for levels 1-2.

Looked at Ghosts of Aniel, seems like it might be good, but haven't played it.

I assume by "One off" you mean something that can be finished in a day, rather than a longer campaign.
If you want something longer, "Witchblade" (set in Iron Kingdoms) is awesome, though it is supposed to cover levels 2-9 or so.
