I get the basic idea, but could someone point me towards a more definitive explanation, and maybe a some good places for related reading?

Essentially, gestalt is taking the best parts of each class.

For anything that both classes have, such as HD, BAB, and each individual save, you use whichever one is better.

For anything that is unique to each class, you get those from both classes.

That is pretty much it.

Edit: Just a tip. If you are planning on running a gestalt game, don't let your players use a Fighter//Psychic Warrior combo. The number of feats are just too much.

On the other hand, if you are PLAYING in a gestalt game then Fighter//Psychic Warrior is the way to go!

When more than one class enters the same side of a gestalt thing get a little more complicated. Consult your DM on this one- some of them allow things like partial BAB, others don't. Same deal for saves. If you're the DM I advise the following as the simplest solution: have players calculate each side of the gestalt separately, as if it were a non-gestalt character, and then pick the better result for each stat between the two of them.

Gestalt characters are an alternate rule available in Unearthed Arcana.

Paladin//Swordsage is fine. Wizard//Psion is overkill.
