How do I create a "single post" like the ones people use for homebrewers' sigs and such?

You can't. You can however view any post that has been made as a single post without the context of the rest of the thread. Simply click the post number in the top right corner of the post. It will look something like this: #1

As Rawhide said, you can view a single post (and get the URL to link it that way) by clicking the #<number> of the post.

Rawhide's post by itself. (http://www.giantitp.com/forums/showpost.php?p=14351071&postcount=2)

If you now click the thread link above that, you'll go directly to that post within the thread.

Rawhide's post in context of the thread. (http://www.giantitp.com/forums/showthread.php?p=14351071#post14351071)

Quote this post to see the slight difference in the link formatting.

I believe there is a thread in the Homebrew subforum that holds a good few people's extended signatures. I may be remembering that wrong, though.

You remember correctly. That thread would be here (http://www.giantitp.com/forums/showthread.php?t=60676).
