Elixir Drinker
Elixir drinkers are undead preserved by drinking a foul potion that will prevent you from perishing, even an inch from death, but
with a terrible price: your morality, making you insanely evil. They appear as normal humans, although rotting away. Their skin and
hair is white, and their eyes roll wildly.
The first elixir was invented by an insane alchemist 1000 years ago, after comparing alchemical texts from around the multiverse.
He found a way to make oneself immortal, save perishing by acid. Fifty years later, it turned up in the hands of the ruler of a holy
order of knights dedicated to Pelor(or whoever) The leader gave his knights the elixir, and they became corrupt, and conquered an
empire for themselves. After another 500 years, an uprising supported by the neighbouring kingdoms defeated them and destroyed
them utterly by acid. They burned the texts describing the true elixir. After 200 years, the only surviving immortal knight found the
early notes of the alchemist. He, however, made the wrong potion, but made large amounts. However, after 200 years, 100 years
ago, the notes were burned. Now, the Elixir Drinkers wander, killing, because they think they cannot be killed.

The elixir
Upon drinking one vialful of elixir, add 1 undead hit die to the subject's hit points and heal them by 1d4 hit points. However, they
immediately become Evil, and gain the undead type. Only a Remove Curse, or similar can reverse the effects. After one year of
being under the effects of the elixir, the subjects become addicted to the elixir. They also gain immunity to aging effects. They gain
the ability to use Inflict Light Wounds once a day. After ten years, they can use it twice a day, and their constitution drops by 1
every ten years. After 50 years, they can use it thrice a day. After 1000 years, they die, if they have not already. Most Drinkers
use the elixir once a year. After being addicted, thrice uses per year. After fifty years, they use it 5 times a year.

The "The Elixir" section should probably be cleaned up; you have them first gaining the Undead type, but not gaining "immunity to aging" or loss of Con until later. You should also have a description of the elixir's production: it it a wonderous item? Is it a Craft(alchemy) check? Is it produced by something?

Also, this feels like an acquired template.

Minor nitpick: the constitution should be "Con -" for an undead, not 0. Con - means undead; Con 0 just means dead.

This seems more like a template, maybe you could use the template format. And mention what was the example creature before been an Elixir drinker.
