I was thinking of doing away with using hardness and hp for damaging/breaking weapons and items and just using break DCs to simplify things. Sunder would work the same way up until rolling damage, where instead you would roll a strength check to break the item.

Edit: And worn armor can be broken because saying "you can't do that" in this situation makes little sense to me.

Would this work? If not, why? What have you all out there done to simplify Sunder and Breaking items in general?

This might make sundering easier to do, especially for the enemies.

The problem with sundering is that as players you are destroying the reward, and as a DM you are taking away the player's items. Since sundering is most likely to affect melee over casters, it further increases the power disparity between them.

I would start with making it a lot easier to repair sundered items, and then figure out if you need anything more.
