I'd like to try my hand at looking at 5e. Is there a complete list of 5e materials somewhere? Including all the web stuff like Unearthed Arcana?

There aren't that many books, actually. Player's Handbook is all you need to get started as a player. Read the basic ruleset (https://dnd.wizards.com/articles/features/basicrules) if you want a preview of what the PHB is like, or to just read about the system.

DM's will want the Monster Manual and Dungeon Master's Guide as references.

Then, there are a series of published adventures. Again, you don't need these unless you're a DM.

Rise of Tiamat
Princes of the Apocalypse
Out of the Abyss

Oh, there's also a starter kit for about 13 bucks online, which includes a set of dice, a quick cheat sheet (well, booklet, but it's a handy summary), and Mines of Phandelver, an intro adventure if you want to dip your toe into the DM waters.

They're also releasing a Sword Coast supplement book fairly soon, which has more character and setting details.

Above is a link to character sheets and a description of the Adventurer's League, which if you're in the right cities, can be a good way to get some gaming in.
