Shovel Knight is one of my favorite video games, so I did my best to translate that to D&D 5th. I feel like the wording could be tightened and there's probably some balance issues, so if you have any concerns or suggestions please let me know! My son loves shovel knight but I've never played it.

Are there long term effects of the alchemy coin? Gaining ~200 lb/day of gold (10,000 gp) throws wealth out of whack - maybe they turn back to flesh in a turn.

I find the 3rd level ability weak. And I think the first benefit of an archetype should be fun and defining as many games never get too far beyond that level. You get a weapon that's nothing special and it gets a bonus you'd often get anyway. How about making a shovel an exotic weapon, that has a few perks. Maybe as a greataxe, plus the blade acts as a partial shield giving +1 AC. Maybe also a bonus to some actions such as trip or disarm.

Charging up your shovel to an extra 2 dice of damage isn't that great if you are currently otherwise doing 2 attacks/round and are a level from 3. How about if the attack is magical and ignores all resistance/immunity?

Middle Finger of Vecna (http://www.middlefingerofvecna.com/2015/10/shovel-knight.html) has put out a Shovel Knight Martial Archetype. My favorite thing that they did with it was giving it a burrowing speed.
