Are there any websites I can use to have a "portfolio" of my homebrew things? a page with documents, easy to sort and have the most up-to date versions front-and-center while still keeping a log of previous versions?

Try gmbinder.com (https://www.gmbinder.com/). You'll have to edit your formatting to fit their style, but the result is a nice attractive faux-PHB style, and I know they allow you to keep previous versions. Don't know about organizing your materials by category because I've never tried.

follow up question where can I find pre-formatted pages for the sub classes (bard colleges, Monk traditions) or races, etc.?

I've also kind of wondered about a good place to compile my homebrew stuff for easy access, as one of my DMs apparently likes browsing the homebrew forums and throwing my own items at me as loot. I was thinking of just using Google docs, but this GM Binder looks great.
I'm playing around with it a bit on my phone and can't find out how to delete a file, though... Is my only option to archive something that I don't want to keep?

I actually made a github for my homebrew stuff. github was originally designed for version control with coding but it works just as well for normal documents, and I make edits enough that being able to roll back if you change your mind is very useful
