I've been thinking of picking up Pathfinder, due to its expansive SRD and its supposed simplicity to learn, but I do have one concern:
Can you run Pathfinder only using the SRD bestiary, or do you need to purchase that book?

I think it's enough. You may add templates or use the Variant Monster Index if you need so.

I highly suggest using http://www.monsteradvancer.com/ as well to create more powerful versions of normal mobs. Kobold sorcerers? That's just rude. It'll give both the 3.5 and the pathfinder versions for the mobs so you can use either system with it.
That way it expands the srd quite a bit to give a lot more variety and replayability out of favorite lower CR monsters.

If you do pick it up, the combat manager program which is linked from the pfsrd is very useful; it has a built in monster advancer, and a lot of other useful features.

You can basically run awesome games with just the SRD, if you're creative enough as a DM to mix up your monsters.
Imo the only thing that is lacking on the SRD are pre-made monsters, but the wide variety of templates and stuff makes it easy to make some yourself.
