Pretty much. Most trap spells last forever until triggered, but they're balanced by the long casting time (10 minutes!?).

Can you have an infinite number of traps waiting?
You might say so, but they work best as immediate traps. At the very least, they'll last for a day, since most invocations last for 24 hours.

Could a Rogue with Long Spoon Thieves Tools (don't remember where they're from, but it essentially gives you reach with Disable Device) disable it as a magic trap?
Of course, but it'll be a tad hard to disable it in battle. Unless it accelerates the Disable Device check to a full round. Being an SLA that creates a magic trap, it falls under Trapfinding rules.

Does Dispel Magic destroy such a trap?
That depends on whether Dispel Magic can disarm a trap made by a spell-like ability. Judging that it's a spell-like ability that behaves like a spell in most aspects (aside from the infinite uses), a spellcaster using area Dispel Magic and beating your modified CL with its dispel check will dispel the trap, much like it would dispel a Glyph of Warding or a Symbol of X spell.
