Pssh. I've always preferred my pancakes with nothing but a little butter on them. If they aren't good that way, get a better batter. Admittedly, I've never had Real Maple Syrup, but even if it's leagues better than whatever Aunt Jemima is oozing, I'd still probably consider it superfluous to the taste of a good pancake in and of itself. I'm more interested in applying maple syrup to my breakfast sausages or maybe some toast.

Leagues don’t even come close to the difference. Seriously. Even if you don't like it on your pancakes or waffles, real maple syrup is astronomically better than the process junk.

As for the unsweetened pancakes, I agree. Try maple cupcakes though. Or REAL maple candy... yummmmm....

The only thing better, on pancakes, than Maple Syrup is a combination of Crispy Aromatic Duck, Spring Onion, Cucumber and Hoi Sin source. But that's a whole other thing really.

I've been known to vary up my maple syrup (always bought from stalls on the side of a highway) with strawberry jam, or apple syrup.

I like pancakes with fresh and juicy blueberries cooked into them. I put syrup on them, but it doesnt really need it if you got good blueberries for it.

In my town there's a great restaurant called Hell's Kitchen, whose pancakes and waffles are both amazing. The batter has cornmeal in it, among other things. They are a prime example of my tendency to eschew (fake) maple syrup, though I would try strawberry or apple syrup gleefully if those were complementary.
