Well, to be more precise, in this context, onion skinning just means you have images of the previous frames partially visible beneath the frame you're currently drawing. Non-digital animators use tracing or transparent paper for that sort of thing. It's, like, onions come in layers, apparently, and you can peel the skin off and see more layers of onions, and that's where the term originates.
