Hrmm, you know. Marceline's powers and vulnerabilities are not really defined. She avoids sunlight, but that could be more about discomfort than actual harm. Also, in the aftermath of the Mushroom War, dust clouds could have made sure there wouldn't be much in the way of sunlight for some time.
So Hunson leaves his daughter in the ruins, knowing she's in no real danger, or if she is, simply not caring (Perhaps with the logic of "Any REAL daughter of mine will do just fine out there"). His plan is that she'll spend a few centuries rampaging among the survivors, drinking their blood or eating their souls or whatever.
Instead, Simon finds her. Depending on her innate powers, she may or may not have been in any real physical danger, but he raises her, protects her, teachers her. This goes on for awhile, until he finally loses his memories.
Hunson returns, sees that his daughter has survived. Rather than a chaotic-evil killing machine, she's a basically good, if somewhat selfish, person who enjoys messing with people.
