So is my defense an Athletics roll, or my Fists? Or does tagging the aspect "Flat on his ass" simply give me a bonus to Athletics, should I decide to use it as my defense?

I'll just roll for my Fists (Great, +4), first, and see how this goes. It seems like I could probably try to use my Awareness to 'see the punch coming' and gain a bonus to my Fists, but since I'm not positive how I'd do that, I'll wait on that for a bit. (4d3-4)[5]
