Does this hand have 5 foot reach or does it provoke and AoO? Does it provoke AoO if it travels through an enemy square on its way to deliver a touch to another enemy? If neither of these two occur, what's the point of it having HP and AC? So that someone can target it instead of you when they attack your square?

The spell says nothing about the hand's size category - so it has your reach.

The point of it having AC and HP is so that people can destroy it by either readying an action or attacking it on their turn, yes.
