I feel strangely compelled to write out ASCII penises now.
Serious question, though. Easy answer to "You're straight, right?" when a 'no' will cause people to assume that I'm gay, and I, in fact, just like people and don't particularly care what gender or sex they happen to be?

Well, there's always the simple response:
"You're straight, right?"
"Bi."
Needs no further explanation or extrapolation.
Note: It is far easier to say a term that everybody recognises (like bi or bisexual) than to use a term that very few people recognise or understand (such as pansexual). If you consider yourself more associated to a definition that few people recognise, it is best to leave that for a more in depth conversation or a conversation with people who would recognise it.
Then there's the somewhat nerdy response:
"You're straight, right?"
"I'm True Neutral. I go both ways."
Bonus points if they get the reference.
There are also responses similar to golentan's suggestion, "I'm not that picky about nice people" (which you liked) or "Gender doesn't matter to me". But be prepared for the possibility of quizzical looks or to provide explanation or extrapolation in some cases.
Disclaimer: I'm not a bisexual or homosexual nor do I play one on TV, so I have not had an opportunity to test these answers first hand. Use advice with caution. This meme has been overused recently.

This adorable gay fellow that used to frequent my coffee shop stopped in today to buy a drink. =3 He is about the nicest person I have ever met and rates in the top ten in campiest gays I know. He actually told me his coffee tasted ~Faaabulous!~

I've always used tildes to indicate mock-singing voice.
And Rawhide, you make a good point. I've gotten used to spending time around people who understand me when I attempt to speak English, which is never a good thing.

Is all about the swing of how you're pitching it, and whether they're artificially elongating everything in one way or the other way. And where you're elongating from. Very much a head-voice thing, as opposed to a back-voice or a chest-voice or an ab-voice.
Crap. What is name of muscle that...does the lungs....Diaphragm!? Yeah, diaphragm-voice is very different too. Not quite pure head-voice though. It's got something else mixed in there.

"Being Taken" is an easy way to dodge the bullet: If there's someone you like, ask them (as an engineering gal you can take your pick of your social circle if experience is any guide). And if not having a significant other is a plausible fiction with minimal upkeep, and cuts back on harassment. Take friday evenings for "Dates" and go browse a book store or catch a movie or just go hiking, and you can even honestly say you're with the person you want to date at the moment: Namely nobody.
I pulled that one for a couple years, a while back.
