@In Flames: Yeah, they were good up until and including Clay Man. Soilwork were good up until and including Natural Born Chaos for me.
Afterwards the sound of both bands went too much into another direction.
IF are my showcase object for evolving _away_ from their sound, while I always cite Dark Tranquillity as a band that evolved their sound further. I hope this makes sense outside of my own head.

@In Flames: I never really got into In Flames to be honest. It's not that I dislike them, I just never thought of them as anything special. They're the sort of band I'd listen to if they came on the radio. There are many other Melodeath bands I prefer.

@ Darkane, they seem pretty good but a bit unoriginal, still i approve, the video scared me
@ Crowbar, this band seems a bit more original than Darkane, its like Death Sludge Metal, in short, pretty cool

They're the first sludge band I've heard that bothered harmonizing guitars, or at least doing it on a "single". Can a metal band that isn't shooting for commercial success have a single? *shrug*

Of course, that may not be in the spirit of your request, because every Russian Circles song is an instrumental.
There are a couple of other instrumentals by bands that normally employ singers that I enjoy, though. Like Sons of Thunder.

I don't consider Van Halen metal; he's straight up hard-rock, especially the fist album. That's, of course, a matter of opinion, and there's no question he influenced basically everyone who came after, but there it is.

Eruption is an awesome solo, and I DO consider it metal, but it's not the best instrumental IMO.

Anesthesia (Pulling Teeth) by Metallica. Really, it's a Cliff Burton vehicle, but was released by the band.

I just bought tickets last night to see Rammstein in concert. Floor tickets, so I will be embracing the moshpit. Their music is decent-good, but I'm really looking forward to the pyro show! Metal just isn't metal without 15' tall jets of flame everywhere...
As far as metal instrumentals...you guys know about Ryashon? I recommend Becoming the Storm and The Skeletorium. All their music is vocal-free.
