So does that mean you progress your current initiator class and gain Desert Wind/Devoted Spirit maneuvers? Or do you stop gaining your current disciplines and start gaining new ones? I'm really not so great at Tome of Battle

Okay. There's a difference between your Initiator Level (IL) and your maneuver progression. You gain maneuvers as the class tells you - thus, when you switch from something to JPM, you stop gaining maneuvers as your prior class, and start gaining them as a JPM, from the disciplines set forth therein.

However, you add your JPM levels to your prior initiator levels to determine your overall IL. Your IL is one of several prerequisites for maneuvers known. For example, if you went Warblade 10/ Fighter 10, you would have a Warblade IL of 15 - 10 from Warblade levels, and 10/2 from Fighter levels. That qualifies you for 8th-level maneuvers.

Contrast this with if you multiclassed two different initiating classes. For example, if you took Warblade 10/ Crusader 6/ Fighter 4, your IL for Warblade maneuvers would be 15 - 10 from Warblade, 6/2 from Crusader, 4/2 from Fighter - and your Crusader IL would be 13 - 6 from Crusader, 10/2 from Warblade, and 4/2 from Fighter. That means that if you take a level of Warblade, your IL of 15 qualifies you for an 8th-level Warblade maneuver; if you take a level of Crusader, your IL of 13 qualifies you for a 7th-level Crusader maneuver.

JPM says that you add your full JPM level to your IL to determine your total IL. So, for example, if you had a Wizard 3/ Warblade 7/ JPM 10, you would have an IL of 18 - 7 from Warblade, 10 from JPM, and 3/2 (round down to 1) from Wizard. That qualifies you for 9th-level maneuvers. However, you could only take 9th-level maneuvers in the disciplines available to you at that time - thus, if you took a level of JPM, you could only take one from Devoted Spirit or Desert Wind, despite having had access to more while you were a Warblade. If, on the other hand, you mixed Warblade and JPM levels, and took a Warblade level, you could take one from Diamond Mind, Iron Heart, Stone Dragon, Tiger Claw, or White Raven, as you like.

Note that in addition to IL, you also have to meet maneuver prerequisites - that is, to take a Devoted Spirit maneuver that requires two Devoted Spirit maneuvers known, you must already know two Devoted Spirit maneuvers. You must meet the IL requirement in addition to this.

In short, having levels in a PrC that progresses maneuvers is closer to taking Practiced Spellcaster as opposed to advancing via PrC with a caster. You only learn new maneuvers when the class you are in tells you to.

One thing I am curious about, is it seems 9th level maneuvers are nearly impossible to get. I've also noticed that this build takes forever to come online, while maintaining zero AC.

If you were a bushi Zweihander Sentinel warder, you could add your INT to AC and gain a scaling shield bonus to AC (that you can add to your touch AC for a feat). But you don't like Pathfinder.

Also: Gnomish Twistcloth, Haramaki, or an Armored Quilt. OR idk, amulet of natural armor/ring of deflection/bracers of armor? C'mon.

That is awesome. In a high level campaign, you could get some sweet AC out of just those.

There might be... in Pathfinder. Idk about 3.5, they're so restrictive with the availability of material its hard to do any solid research.
