Multiclass Spellcasting
If I have a 7th lvl Sorc 4th lvl Pal, am I allowed to choose paladin and Sorcerer spells up to 5th lvl?
Total noob question, but wanted to double check.

Nope. Anything in the Classes chapter uses the class level.

It does not matter that you are a level 11 character, each class is processed independently.
