Since I am Invisible, my oponent will be flat-footed if I attack him. So, if I should attack him, and he is FF, will he still be able to cover behind his horse as an immediate action in response to my attack ?

An invisible attacker does not render the defender flat footed. It only denies him his dex. Immediate can be taken while denied dex. Though I really don't like how that part of the ride skill is written, I can't find textual support for your position. One can take cover from a mount to try to avoid being struck by an invisible attacker.

It's worth mentioning in your stat block whether you're mounted, even when it's pretty obvious from your build. Horses are large, so you need to specify all the squares you occupy. I need that before I can give LoS.

1. Invisibility makes your gear invisible. "If the recipient is a creature carrying gear, that vanishes, too."

2. "Activating a scroll requires reading the spell from the scroll. The character must be able to see and read the writing on the scroll."

Either you need to be able to see invisible objects, or the scroll needs to be visible. It is within your rights to summon him, but I think you are wasting Kyeudo's, my, and your opponent's time.

If that is the case, I request a full match restart. Simply because my opponent now knows where I am or roughly where I went, and i cannot go anywhere else, so he will have an unfair advantage over me.

Unless Kyeudo says that you can read your own scrolls since the rules doesnt say that you cannot see yourself anymore. It would be awkvard doing anything without seeing your limbs or body.
