I suppose I could rebuild him as a ghost, with ghost touch javelins. I could throw the attack pattern on a Pixie half dragon ghost, even, for invisible manifested ouchies.

It's optional rules for body slot affinities that the gestalt arena uses.
The affinities are located here.
Basically, if you put an item in a slot that it doesn't have an affinity for (Headband of strength, for example), it increases the cost by 50%.
However, as is evidenced by Gauntlets of Ogre Power, hands are an affinity slot for Strength (destructive power - strength... makes sense). So reslotting a belt of strength to gauntlets is in order, and won't even cost the 50% upgrade.
Another one that wouldn't, for example, is changing Boots of Speed to Gloves of Speed (Gloves affinity to quickness, and haste is a good example of that).
However, a Cloak of Speed would be 50% extra.

Now, at this point, I don't see Squiggy yet. Doesn't matter.

I'm game...though I'm gonna switch characters and try that one I posted above...
The only thing I have against ghosts is the Ghost Attack feat, which lets me roll two miss chances, and only 1 needs to be successful...
Is there anything that can be done vs etheral foes?

Well, fully ethereal foes are hit/not hit by the following:
Force effects (one way only - Ethereals can't use force on material plane).
That's it.
In addition, you need an effect about as strong as True Seeing to see an ethereal creature.

No. No, it doesn't. The ethereal plane is on another plane of existence. Spells do not breach planar boundaries without the Transdimensional Spell feat (which doesn't apply to See invisibility) or explicit text in the spell stating it. Teleport can't put you on the ethereal plane, and See invisibility can't see into it. True seeing, on the other hand, has explicit text enabling it.
See invisibility does not.
