so, are there any others? And what kind of templates/feats for mounts are there? The ones I know of so far are

I also once had a halfling ubercharger that rode a cheetah. He traded his paladin mount ability for an alternate class feature and purchased a warbeast cheetah. I highly recommend the template though as a medium creature, I don't suppose the cheetah would be big enough.
Warbeast is on the last few pages of either the MMII or MMIII iirc. It gives a number of boosts including barding proficiency and +10 to base movement.
