Default Switching from Inkscape to Illustrator

Righty, so I just got my shiny new copy of AI CS2 installed.

I've been using Inkscape. I've just noticed that Inkscape gives you about 10 times the amount of vectors than AI. There are a few things I'm going to have to get used to. Like using ctrl (-,+) to zoom in and out; - is the command for the vector deleting tool, so if you don't make the zoom command correctly you end up switching tools.

Also, am I doing something wrong?: Am I supposed to have to hold down Shift to get the attached points which originate from the square vector to appear?

I haven't looked at it extensively yet but if there a 'permanent' setting for the vectors so both attached turning points don't move in oppsite directions when turning one point?
