That Damn Crab is a Monstrous Crab that is exceptionally powerful for its stated CR. It's expected that the crab would be a decent challenge for a group of ECL 6-8. People thought it'd be funny if they added a bunch of templates to it and made it into a god. I don't know about the Salmon, but I imagine it's pretty much the same thing.
