Minotaurs are not specifically associated with loss of arms, though. Mythologically speaking, other than the obvious (labyrinth, curse, hidden shame, etc.), they're tied to the Sun (bulls were solar animals in Mediterranean symbolism, and Pasiphaë was herself a daughter of Helios) and the Sea (the White Bull having been sent by Poseidon).
