Edit: Vic: The baker's dozen is larger than the regular dozen because medieval bakers were highly respected but the penalties for cheating their customers were very severe. So they went out of their way to not cheat customers and I guess the baker's dozen evolved therefrom.

The thirteenth one was for the baker to check to make sure it was up to snuff before sending it on to the nobs.

Well, as we discussed on the previous page, there are several origin stories, any one of which might be true. There was mine, and then Dr. Bath suggested a couple. Not to be snippy, but I don't think yours is any more valid than any of the above.
