Just off the top of my head/glancing around my bookshelves...
American Gods. Simple, to the point, and immediately intriguing.
Sticking with Neil Gaiman, Fortunately, the Milk is another good one. IIRC some of his short stories have pretty good titles as well but I can't bring them to mind.
The Salmon of Doubt. Immediately elicits interest just fo its weirdness.
The Once And Future King always intrigued me just for the title well before I knew what it was about, let alone actually read it."'But there's still such a lot to be done...'

Pratchett is a huge influence in my life, and one of his best titles is I Shall Wear Midnight from the Tiffany Aching series.

I have to second some Gaiman and Pratchett.titles already mentioned as being enticing, but since I had previously read those authors I may have read those works anyway.
Some recent books by authors that were unfamiliar to me but had titles that were intriguing include:
A Natural History of Dragons by Marie Brennan,
A Darker Shade of Magic by Victoria Schwab,
and
The Invisible Library by Genevieve Cogman.
