Y'know, it's occurred to me that a few of these animals in Monster Manual have pretty unique abilities, that are neither present in other creatures or emulated by any kind of class ability or feature.

The ability you referred to is, though. Look up the Cheetah's Speed feat.

Do you consider wildshape to be magic?

Wild Shape is (Su). Activating a [wild] feat (such as Cheetah's Speed) is also (Su). However, once activated (either via the feat or by casting enhance wild shape in cheetah form), using Sprint as a cheetah is an (Ex) ability.

In this post I calculated the speed of sound to 6760' per round.

My Zahnik Bhoom build can clear Mach 2. However, with a good fly speed (such as Mercury Dragon from Draconic Wild Shape), you could probably get it up above Mach 3.
