While Rahda owns the planet, Primus and Matronus own the spirit world. Amon, is the source of magic, while Fogenar protects the world from outsider invasion, and Minulnar does the diplomatic tasks.
There is a 7th, but he is no god...

Shaitan, Lord of the Witches.(evil ones that is) The Great Satan.... Causer of Genocide, patron of murder and ceaseless revenge. He tries to undo all the good things of the gods.
So, I'm wondering, what would be good write ups for a story, and the mythology of the 7 gods.

What sort of mythology are you after? Celtic Pagan? Germanic/Norse Pagan? Greek/Roman Classical? Indian? Egyptian? African? Aztec?
The best way to get an authentic flavour to your mythology would be to pick up a book on the mythology of the culture of your choice, and then adapt and play about with the stories to make them fit your campaign world. Remember that different mythologies focus on different themes; Germanic/Norse mythology is heavy on destiny and fate, whereas Egyptian mythology focusses more on Death and Rebirth.
Three common themes in any mythology are Creation, Continuation and Destruction; i.e. How the Gods made the world, how they keep the world running, and what will eventually happen at the end of the world. Many stories of the Gods involve both interactions between the Gods themselves and also mortals and great beings of the world below.My Creations:

Its not bad at all, but if you were to give them a short story each, even a few lines, it would be better. I'll help a bit.
You could say Minulnar invented illusion when he dressed as a bear to avoid Shaitan.
You could say Rhada created the first storm to show off to Amon.
Maybe...Shaitan lived before the creation of the world, and he's really more confused by the world than hateful.
Maybe the world was created while he slept, and is frightened. Maybe the other gods didn't let him help build the world, so he wants rid of it.
Or, maybe Primus secretly made him, and evil is needed. What a shock for people to find that out.
How about Amon created the elves, but secretly fears that one might steal his magical powers.
Meh.
