Medieval RPG/management type games?
I've been checking out reviews of The Sims: Medieval, and from what I can tell it doesn't quite live up to its potential.
Are there any good games out there about managing medieval people in something other than warfare?"Is this 'cause I killed the hippie? Is that even illegal?"

They're a kingdom managy game. Fantasy over medieval, and there's fighting but you don't control it you set quests and such to encourage others to do it.

Banished is one, although it may be too managy for you.
Stronghold has an economic campaign. The later games in the series are a bit of a mixed bag and I've not heard good thing about Stronghold 3.
The Guild II is set after the medieval period, but appears to be a good management game.
Taking it further back, Zeus and Poseidon is Bronze Age Greece, while Emperor: Rise of the Middle Kingdom is the same except in China.

Crusader Kings 2? You can use military forces to do things in it, but its more about managing your vassals and family ties to increase your power.

I have a love-hate relationship with The Guild II. On one hand I love the game and how the cities can grow and expand based on your influences.
On the other hand, The game basically runs itself after a certain point and the AI of the rival families(the people you have to eliminate) leaves much to be desired.
Can i Just mention how much I really miss the old Impressions Games city management games? I know Emperor: Rise of the Middle Kingdom and Caesar IV weren't made by Impressions, but they were in the same vein.
I was going to mention CKII as well, but i think it might be a little too broad. For what they're looking for.

A bit more thought and some more googling:
Life is Feudal: Forest Village - mixed reviews.
Kingdom - Sidescrolling management game, although with better reviews.
I haven't played either game, so can't offer an opinion on them.

Banished is pretty Rimworld-y in terms of micromanagement, but it's pretty good for some relaxing building. There aren't that many external threats, unlike some games.
