Question: If I attack Sam with my bite attack, (5 foot range), and she readies an action that involves a 5-foot step, can I afterwards attack her with my Guisarme (10 foot range)? This took me by surprise last round, and I just wanted to be clear on how it works.

Also, ready an action: if Sam comes within 40 feet of me (without going through a wall), run up next to him.

By the rules, you're locked in to performing the bite attack, if able. Your character would still be capable of performing the bite, even if the original target is out of reach. Attacking empty squares is allowed, in fact, it's one method of finding hidden opponents.

If you had a second attack, or were willing to declare penalties for attacking with 2 weapons (in which case, the bite would be off hand), then yes.

This is cowardice, pure and simple: but given that Sam moved 9 squares the first round, he's obviously got Skate up. I don't want to engage him while that's active, and I *can't* afford to Rage and use my real Shift until I know I am in control. Sam, though, is acting like he doesn't want to mess with me while my Shifting is up, which is nice.

I think I can drop him with one lucky Full Attack, or force him to make an AoO, or chew him to death with CON damage: I just can't run the risk of him sniping me in the brain and running away. :/
