Who's the better salespony, Applejack or Rarity?

I'm going to say Applejack. Rarity seems to depend on other ponies to show off her product and mostly gets direct requests while Applejack has to compete with every other pony in the market

I don't think either of them are particularly good salesponies, but I also don't think that's inherantly a bad thing, either.
That said, I think Rarity is a slightly better salespony simply by necessity as sales is a much more central part of what she does.

I don't think either of them are particularly good salesponies, but I also don't think that's inherantly a bad thing, either.

Everyone needs food more than they need clothing, especially in Equestria, so for being able to stay in business as she does while competing with the other trend setters, I'd say Rarity is probably the better of the two. Her job hinges a bit more on it, not to mention she works entirely by herself and doesn't seem to have nearly the same level of establishment that a family having ran a ranch and helped found the city did, yet continues to be rather successful. Plus, even her own friends prove that the clients can be quite the challenge.

To be fair, the Flim-Flam Brothers' episode shows that the Apple Family's sales talent and production isn't quite the best, either. Hell, Rarity and the rest of the team have to help them in the contest; otherwise they could have been ran out of business right then and there.

Rarity's business is entirely self-contained, and while she stumbles here and there, the Fashion World is a very violent and brutal jungle. Being as successful as she is is no small feat.

Yes Rarity's talent is such that she actually attracts customers but she rarely manages to bring in new customers by herself. Different ponies, different products, different techniques. Applejack's better at closing at the point of sale. Rarity's better at networking and building lasting, profitable relationships with her clients. Both could be considered "sales" activities.

Neither. My opinion is that they have totally different styles. AJ is all about putting her goods out there and she knows how to get attention, but not how to play up her actual products and really make a sale for her stuff in particular. She's just lucky she doesn't have competition.

Rarity is very good at presenting her stuff in the most alluring light possible (her whole store design does this), but she's a bit vain and isn't good at actually delivering her message in the most effective way possible. Consider, for example, that in Sweet and Elite it was Twilight who came up with the idea of using all that hobnobbing with the rich to sell dresses, which had never occurred to Rarity because she was too busy enjoying it.

You should look up the diamond water paradox. The short version is that the fact that everyone needs something tends to be unrelated to its value. Value tends to be derived from supply and demand, even if the demand is purely for reasons of vanity or status rather than necessity.
